Fresh Goat Cheese We make a large variety of cheeses sure to please many different palettes. Our fresh cheeses are packaged from 3 days to 1 week of age. These cheeses are made using gently pasteurized Goat's Milk. We heat our milk to 145 degrees and hold it at that temperature for 30 minutes. We use a variety of fresh and dried herbs and spices to flavor our young cheeses. Please click here to view and purchase fresh goat's milk cheeses. Raw Milk Cheese We are currently producing a Raw Milk Feta. It is aged in brine for at least 60 days. We produce a small amount of Raw Chevre. We plan to make several other raw milk cheeses in the future. Hopefully this will include a Tomme style cheese and at least one other raw milk cheese. Ripened Cheese Ripened cheeses are aged for at least 3 weeks to develop their bloom and depth of flavor. Our ripened selections include both white and blue mold ripened varieties in several shapes.
